Much like an industrial foundry, The Foundry On Melrose uses a judicious application of high heat to blend together elements that become stronger when mixed. In The Foundry's case, those elements are rustic, charming ingredients, modern technique, and an unmatched flair for American, French, and Spanish cuisine. The combination reveals a dining experience full of creativity and luxury that summons up the rich history that it draws from. Created by celebrity chef Eric Greenspan (a Next Iron Chef competitor who also defeated Bobby Flay in Iron Chef America's "Battle Goose"), the Foundry was a semifinalist for the James Beard award for Best New Restaurant. And for those Grilled Cheese fans, their Grilled Cheese with Short Ribs won the Grilled Cheese Invitational (a veritable Grand Prix of the Grilled Cheese).
